Bodegas Pigar was born back in 2014 as the consolidation of a young couple’s dream: Juán and Susana. Over the years, Juán’s family cultivated the vines to sell to the local co-operative and always kept a little back for their own consumption. Since Juán took over as winemaker, they own 8 hectares of organic vineyards, making high-quality wines with micro vinifications from single vineyards. Their winemaking ethos is low-interventionist: indigenous yeast, no fining, no filtration, and no sulfur additions. The wines age in neutral vessels like concrete and clay.

 

Around 800 bottles were produced of this natural Pet Nat made with all Bodegas Pigar’s heart and soul. Sourced from really old vines (80+ years old) of Royal grape variety grown in Las Casillas. Royal is an indigenous variety almost extinct, which was once the third most planted varietal in Valencia. As trends changed, the light color of this pinkish varietal fell out of fashion as markets were demanding darker-colored wines. This Royal is a gastronomic Pet Nat filled with red forest fruits, stewed rhubarb, and pomegranate nuances. There are some brioche and marshmallows gently coming through due to the lees aging. The mouthfeel is quite chewy yet refreshingly fleshy. 4 months (minimum) on the lees and the dégorgement is done upon request. Probably the best wine made out of Royal in the whole world right now 😉🍾

 

The wine is super versatile, you can either pair it with savory dishes such as your traditional roasted chicken/turkey with cranberry sauce, or some lightly-sugared desserts such as a pomegranate panna cotta, a raspberry cranachan, or simply with strawberries and cream (with a tiny drop of this Royal added to it).
