Quinta da Carolina is a small family project in Cima Corgo subregion of Douro. Luis Pedro Cândido da Silva, the family’s youngest, studied oenology abroad, and started working with Dirk Niepoort. He continues to be head winemaker at both projects bringing all of his expertise and passion.
White:
Xis is coming from over 90 years old vines, with schist soils planted with mostly Malvasia Fina and a few other varieties sporadically planted such as Gouveio, Rabigato, Dona Branca and Viosinho. The grapes are vinified in an oxidative way - pressed into used barrels where spontaneous fermentation takes place and remains for a 1 year under a thick veil of flor. Only 600 bottles produced.
Red:
Xisto Amarelo is coming from Amarelinha vineyard, characterised by its yellow schist (xisto amarelo), planted in patamares (terraces) in the beginning of the millennium, facing east and surrounded by forest, with Touriga Franca as the major variety, along with a little of Tinta Amarela. The whole bunches are thrown into a concrete lagar and foot stomped lightly. After spontaneous fermentation is spontaneous with very low levels of sulfur the wine is pressed and transferred into 50yo German oak foudre for a year; then passed over for another year of aging in a concrete tank for natural stabilization. The tanks are designed in a "wise shape" of a laying egg to provide a gentle spiral movement of the liquid inside. Only 1400 bottles produced.
