Primitivo Collantes is a young and dynamic producer who contributes to the new movement of Jerez wines, which takes care of a historical 5 generations-old bodega and of its own vineyards located in some of the area’s famous 'Crus' such as Pozo Galván and Matlián. The calcareous soils called albariza allows the retention of moisture for the warmer months, the Atlantic winds provide freshness at night and favor the humidity necessary for the formation of the veil of flor and contribute to ventilate the cellar where sherries are matured in a solera system, thus producing wines that are very impregnated in locality and history, whether familiar or local. 
 
Fossi is an Amontillado harvested from a single vineyard called Matalián. The free-run juice extracted during the first press has been used for its production. The ageing in here is a bit more complex, still in the traditional solera system, but it initially aged biologically under the veil of flor for 5 years and then fortified up to 18% ABV to make that veil dissapear so it can age oxidatively for additional 10 years. Complex yet divinely Atlantic. 
 
El Trovador is a Cream that blends Primi's Moscatel Oro (75%) with the previous Amontillado to give life to a sweet sherry which ain't at all cloying, but fresh and very drinkable. You'll fall easily in love with it.
