Adega Sernande is an honest project, committed to responsible viticulture, which seeks in its wines to bring out the character of the land from which they come. They seek to make natural wines by doing respectful work, pampering the wines in the cellar, with their necessary times and evolutions. María José Aira decided to start a different project with Antonio López, her partner. That’s how Adega Sernande was born. It is located in Pantón, right in the heart of a vertiginous and dramatic landscape.

 

Despite being embraced by the Designation of Origin, their wines go on the market without that certification. The traceability of the grapes used at Adega Sernande is spot on. They work only with rented or owned vineyards within the borders of the appellation. However, their wines take greater risks in order to give them uniqueness and prevent them from being clones one from the other. They use indigenous yeasts, they sulphate as little as possible, they do not correct the acidity with tartaric acid and they allow the wines to stabilize in the bottle for 18 months before putting them on the market. They do not sell defects as virtues.

 

Chanzos is sourced from two vineyards located on slopes of an 65% of inclination in contact with the river Sil and growing over soils made of slate and schist. The vineyard does not receive any type of irrigation or mineral or organic fertilizer, leaving the vine survive in its natural habitat. 80% Mencía with a 20% of Sousón. Ferments with 30% of the stems in an open ‘tino’. It gets stepped daily, and it macerates on skins for 3 months. It aged for 10 months in French oak barrels of sixth use.
