Jesús and Julián are two cousins based in Quintanar de la Orden (Toledo). Besides getting along really well, they complement each other perfectly. Jesús, the fifth generation of farmers, is the man behind the wine whilst Julián is the no-nonsense guy crunching the numbers. The name of their project makes perfect sense. They started out in a garage with just a very basic equipment. At present, they make around 10,000 bottles of indigenous varietals.

 

This Cencibel (that's how Tempranillo is called in La Mancha) is an authentic, unadorned expression of the variety, produced entirely in stainless steel to preserve its freshness and natural character. It comes from a bush-vine plot planted in 1970, under strictly dry farming. What makes this Cencibel unique is its triple harvest, a meticulous process that lends complexity and richness to the wine. 

 

The first harvest is done before the grapes are fully ripened to provide vibrant acidity and freshness. The second harvest happens when the grapes are at the peak of ripeness, achieving structure, balance, and varietal expression. The third harvest is a slightly later one, which helps concentrating sugars, enhancing aromatic intensity, and adding volume on the palate.

 

Deep varietal nuances, somewhat a bit rustic, muscular yet vital and fresh.
