Bubbles from Jerez!!! This cuvée is one of the reasons why the two brothers behind Vinificate Winery are called the Mahara (crazy, nuts, in Spanish slang). Who would risk making a pet nat in a land that is more reputed for its sherries? Only them!    
 
Espátula comes from a 95 y/o vineyard located in an Oceanic Pago. This is made with the free run jus which is bottled before it finishes fermenting. Thus, the fermentation is finished inside the bottle trapping some fizz. The wine is so greedy. Really concentrated fruit (citrus, white stone fruits) dressed with salinity and a chalky character. It shows that complexity can be achieved in a pet nat. Bravo!
