Established in 2005 and then discovered by Mathilde Chapoutier during a trip to the area, purchased in 2016 and located in Sotillo de la Ribera within the DO Ribera del Duero. They work 19.5 hectares of deep clay-limestone 15,5 hectares for reds and 4 hectares for whites all of it biodinamically although only the reds under the Demeter label certification. The vines are old high-lying terraces (30 years old) . The vineyards, planted at 850-900 meters above the sea level benefit of a Mediterranean/Continental climate with cold winters and hot summers. The diurnal range is quite high, that play a key role in maturation process. At the winery they apply the knowledge of the traditional savior faire of the family Chapoutier in Côtes du Rhone. The result is very precise and elegant wines, well integrated. Mathilde is the eighth generation of her family to make wine. She bringings a global insight, and entrepreneurial eye and the vision of a new generation to M. Chapoutier.

 

This is a single-varietal made of the white Albillo Mayor that comes from 40-year-old vines planted on clay and calcareous soil. The vineyards are farmed organically with biodynamic treatments to maintain the natural balance of the soil. In the winery, direct pressing of the whole bunches is carried out and the must obtained ferments with native yeasts in stainless steel tanks (70%) and in demi-muids (30%). The wine is then aged for 12 months on its lees.
