Blackbook is an exciting urban winery located in a railway arch in Battersea in South London; it's the first solo project from winemaker, Sergio Verrillo, and his wife Lynsey. The grapes are sourced from growers within hours of the city, carefully selected for their well-located vineyards and high quality grapes.
 
GMF is a champagne method sparkling wine made from 100% Seyval Blanc. The grapes are whole bunch pressed into a mix of stainless steel tanks and old Burgundy barrels for fermentation. Bottled under crown cap, we leave this opulent wine undisgorged, giving the benefit continued lees ageing in the bottle, adding to the texture and complexity. The wine spends a minimum of 6 months ageing on lees prior to bottling and secondary fermentation.
