This box consists of 2 bottles of 3 different wines (6 bottles in total) made by Bodegas Carballal in Rías Baixas, Galicia. 
 
The viticulture in here is sustainable: vegetable cover, soils are enriched with organic compost, small yields, good phenolic maturations, spontaneous fermentation… everything in order to reflect, vintage after vintage, an honest picture of their terroir on a specific year. The soils here are mainly granitic (mineral and sapid character) and sandy (contributing to texture). Regarding the vinification, there are three fundamental rules: indigenous yeast, fine lees stirring, and malolactic fermentation. All their wines are fermented and left to rest shortly on their fine lees in stainless steel.
 
- 7 Cepas 2020 is all that you expect from an artisanal Albariño: citrus, apples, mirabelle plums, and white flowers. Very fresh and saline!
 
- 7 Cepas Ecológico 2019 is their most natural approach to viticulture. An Albariño aged for longer on its lees (and bottled with them) giving us a flintier and creamier wine in return, without losing a drop of its vibrancy.
 
 - 7 Cepas Tinto 2019 is a classic example of what a "Coastal Red" has to be: crunchy red fruit, seductive herbaceousness, very aromatic, very linear, and low in alcohol! Made of Caíño Tinto & Mencía, this is a style of wine thought to enjoy on its own or alongside seafood dishes as we do in Galicia.
