Ramiro Ibañez and Willy Perez are integral to reframing Jerez. Both grew up in the region and nobody knows more about its history and terroir. At De la Riva, they are changing the face of Sherry, by taking Jerez right back to its roots. Their wines are not fortified. Instead, they use a process called asoleo, where grapes are left in the sun to naturally increase their alcohol potential.
These wines were made in the vineyards, with the region classified by soil type; considered to be a crucial element in selecting sites for age-worthy winemaking. This connection to the vineyard was lost when Sherry became industrialised. Jerez is commonly seen as a region where terroir isn’t an important factor in defining the wines. This hasn’t always been the case; in the past the region was delineated into Pagos - blocks of vineyards that have similar characteristics - and naturally some vineyards were considered more noble than others and were bottled separately.
What is in the box?
This exclusive collection is made up of a set of six bottles in a branded wooden case that address the mysterious issue that is the biological aging (= under veil of flor). Thus, you will be able to understand, among various aspects, how it is developed, how it is worked and its final relationship with the wines that are crafted.
